Oreo Cheese Cake

Ingredients:
4 packages cream cheese (908 grams) or 2 pounds
1 package of oreos 16 oz or 450 grams
4 Tablespoons butter (45 grams)
4 eggs
1 cup sugar (200 grams)
1 Tablespoon vanilla (15ml)
1/2 cup cream (whipping cream, heavy cream) (180 ml)
1 cup sour cream (230 grams)

Bake 350 (170C) for 15 minutes, then lower heat to 250 (121C) and bake an additional 1 and 1/2 hours. I used a 9 inch springform pan for this.

Chocolate Ganache:
2 cups chocolate chips 12 oz or 240 grams (semi-sweet) or (milk chocolate)
I used semi-sweet
1 and 1/3 cups cream (320ml)
